P\u0159ed \u010dasem spojili v\u011bdci z Harvardu n\u00e1r\u016fst rakoviny tlust\u00e9ho st\u0159eva u mlad\u00fdch lid\u00ed s&nbsp;konzumac\u00ed ultrazpracovan\u00fdch potravin. Maj\u00ed \u0161patnou nutri\u010dn\u00ed skladbu, ale i zp\u016fsob zpracov\u00e1n\u00ed vede pr\u00fd k&nbsp;po\u0161kozen\u00ed zdrav\u00ed. Magaz\u00edn Lancet je ozna\u010dil za glob\u00e1ln\u00ed hrozbu.<\/p>\n\n\n\n<p><strong><em>Ultrazpracovan\u00e9 potraviny<\/em><\/strong> nab\u00edzen\u00e9 v&nbsp;obchodech jsou c\u00edlen\u011b vyr\u00e1b\u011bny tak, aby byly l\u00e1kav\u00e9 a dostupn\u00e9.&nbsp;A v\u0161ude p\u0159\u00edtomn\u00fd marketing reklam se n\u00e1s sna\u017e\u00ed p\u0159esv\u011bd\u010dit o tom, \u017ee jsou i zdrav\u00e9. V\u00fdrobci takzvan\u00fdch ultrazpracovan\u00fdch potravin tvrd\u00ed, \u017ee kdyby&nbsp;se p\u0159ijala opat\u0159en\u00ed, jak\u00e1 navrhuj\u00ed v\u011bdci&nbsp;<a href=\"https:\/\/www.thelancet.com\/series-do\/ultra-processed-food\">ve studii<\/a>&nbsp;zve\u0159ejn\u011bn\u00e9 v \u010dasopisu Lancet, p\u0159i\u0161la by spole\u010dnost o bezpe\u010dnou, cenov\u011b dostupnou a trvanlivou stravu.<\/p>\n\n\n\n<p><strong>Je popisov\u00e1no n\u011bkolik skupin potravin<\/strong><\/p>\n\n\n\n<ul>\n<li>Do prvn\u00ed se \u0159ad\u00ed r\u016fzn\u00e1 nezpracovan\u00e1 rostlina (nap\u0159. zelenin, tak jak vyrostla.<\/li>\n\n\n\n<li>Ve druh\u00e9 skupin\u011b jsou kulin\u00e1\u0159sk\u00e9 ingredience, kter\u00e9 vezmeme z&nbsp;t\u011bch z\u00e1kladn\u00edch produkt\u016f a zpracujeme na mouku, olej\u2026<\/li>\n\n\n\n<li>T\u0159et\u00ed skupina obsahuje v\u00edce zpracovan\u00e9 potraviny. Nap\u0159. se z mouky, oleje, vody a dro\u017ed\u00ed upe\u010de chleba, ale nejsou p\u0159id\u00e1v\u00e1ny <em>dal\u0161\u00ed slo\u017eky<\/em>, kter\u00e9 by nebyly v&nbsp;prvn\u00edch dvou skupin\u00e1ch.<\/li>\n\n\n\n<li>Ultrazpracovan\u00e9 potraviny pat\u0159\u00ed do \u010dtvrt\u00e9 skupiny. Jsou vyrobeny z&nbsp;jednotliv\u00fdch slo\u017eek, kter\u00e9 byly speci\u00e1ln\u00edm procesem&nbsp;<strong>odfiltrov\u00e1ny a odd\u011bleny<\/strong>&nbsp;<em>z&nbsp;celku z\u00e1kladn\u00ed potraviny<\/em>, nebo se jedn\u00e1 <em>o extrakty<\/em>, r\u016fzn\u00e1 <em>aditiva, barviva, emugul\u00e1tory<\/em>\u2026 V\u0161e dohromady se kulin\u00e1\u0159sky zpracuje, p\u0159etvo\u0159\u00ed do ur\u010dit\u00e9 formy, p\u0159id\u00e1 se l\u00e1kav\u00fd obal s&nbsp;reklamn\u00edm obr\u00e1zkem i n\u00e1zvem, kolem produktu se vytvo\u0159\u00ed reklamn\u00ed kampa\u0148. V&nbsp;TV na v\u00e1s takov\u00fd v\u00fdrobek vyskakuje mnohokr\u00e1t denn\u011b, a kdy\u017e p\u0159ijdete do obchodu, je um\u00edst\u011bn ve v\u00fd\u0161i o\u010d\u00ed, jen po n\u011bm s\u00e1hnout. Co naplat, \u017ee vznikl\u00e1 potravina v p\u0159\u00edrod\u011b vlastn\u011b neexistuje.<\/li>\n<\/ul>\n\n\n\n<p><strong>Test<\/strong><\/p>\n\n\n\n<p>Kdo m\u00e1 z\u00e1jem, m\u016f\u017ee si ud\u011blat sv\u016fj vlastn\u00ed experiment, p\u0159i kter\u00e9m m\u00e1te n\u011bkolik t\u00fddn\u016f konzumovat tzv. ultrazpracovan\u00e9 potraviny t\u0159ikr\u00e1t denn\u011b, t\u0159eba z&nbsp;fast foodu, nebo si po\u0159\u00edd\u00edte balen\u00e9 polotovary z&nbsp;obchodu, ur\u010den\u00e9 pro rychl\u00fd oh\u0159ev v mikrovlnce. Zku\u0161enosti ukazuj\u00ed, \u017ee v\u00e1m budou zpo\u010d\u00e1tku chutnat; jsou v\u00fdrazn\u011b slan\u00e9 a ko\u0159en\u011bn\u00e9, ale po t\u00fddnu na n\u011b p\u0159estanete m\u00edt chu\u0165. A sledujte tak\u00e9, jak se m\u00e1 va\u0161e za\u017e\u00edv\u00e1n\u00ed, zda se neobjev\u00ed t\u0159eba nad\u00fdm\u00e1n\u00ed, p\u00e1len\u00ed \u017e\u00e1hy nebo z\u00e1cpa, bolest hlavy, buzen\u00ed uprost\u0159ed noci s&nbsp;pocitem hladu. Jak se da\u0159\u00ed k\u016f\u017ei a psychice a jak se chov\u00e1 v\u00e1\u0161 BMI.<\/p>\n\n\n\n<p>Po n\u011bkolik t\u00fddnech vyhodno\u0165te sv\u016fj zdravotn\u00ed stav s&nbsp;v\u00fdchoz\u00edm okam\u017eikem, kdy jste vlastn\u00ed experiment za\u010dali. A p\u0159itom je t\u0159eba dodat, \u017ee pro mnoho lid\u00ed je onen zp\u016fsob stravov\u00e1n\u00ed b\u011b\u017en\u00fd.<\/p>\n\n\n\n<p><strong>Dal\u0161\u00ed sou\u010d\u00e1sti \u00b4j\u00eddla\u00b4 4. skupiny<\/strong><\/p>\n\n\n\n<p>Takto zpracovan\u00e9 \u00b4tak\u00e9 j\u00eddlo\u00b4 obsahuje glutam\u00e1ty, mno\u017estv\u00ed soli i cukru, stabiliz\u00e1tory, konzervanty, zv\u00fdraz\u0148ova\u010de chuti, um\u011bl\u00e1 aromata, sod\u00edk. Nenajde se v&nbsp;n\u011bm zdroj vitaminu D.<\/p>\n\n\n\n<p><strong>A co v&nbsp;nich nenajdete<\/strong><\/p>\n\n\n\n<p>Podle jin\u00e9 studie byl konstatov\u00e1n \u0161patn\u00fd pom\u011br omega-3 v\u016f\u010di omega-6 MK a \u010dten\u00e1\u0159 p\u0159echoz\u00edch \u010d\u00e1st\u00ed ji\u017e v\u00ed, co to znamen\u00e1. D\u00e1le i nedostatek polyfenol\u016f, prebiotik, 1-3,1-6 b-glukan\u016f.<\/p>\n\n\n\n<p><strong>Dal\u0161\u00ed nev\u00fdhody<\/strong><\/p>\n\n\n\n<p>Pozorovan\u00e9 potraviny maj\u00ed obvykle <strong><em>vysok\u00fd glykemick\u00fd index<\/em><\/strong> a <strong><em>patologick\u00fd pom\u011br elektrolyt\u016f<\/em><\/strong>.<\/p>\n\n\n\n<p>N\u011bkter\u00e9 potraviny ze \u010dtvrt\u00e9 skupiny maj\u00ed <strong><em>i nadbytek AGA<\/em><\/strong>, co\u017e jsou bioaktivn\u00ed molekuly vznikaj\u00edc\u00ed p\u0159i neenzymatick\u00fdch reakc\u00edch <strong><em>spojen\u00edm cukru s b\u00edlkovinami \u010di tuky (glykace)<\/em><\/strong>. Vznikaj\u00ed p\u0159i vysokoteplotn\u00edm zpracov\u00e1n\u00ed potravin, jako je <em><u>pe\u010den\u00ed<\/u><\/em>, <em><u>sma\u017een\u00ed<\/u><\/em> nebo <em><u>grilov\u00e1n\u00ed<\/u><\/em>.&nbsp;Konzumace uzenin, sladkost\u00ed, vysoce zpracovan\u00fdch potravin a sma\u017een\u00fdch j\u00eddel zvy\u0161uje jejich hladinu v t\u011ble.&nbsp;A to vede <strong><em>k chronick\u00fdm z\u00e1n\u011bt\u016fm v t\u011ble a urychlen\u00ed procesu st\u00e1rnut\u00ed<\/em><\/strong>. Zvy\u0161uje se <strong><em>riziko<\/em><\/strong> <strong><em>rozvoje inzulinov\u00e9 rezistence a cukrovky 2. typu<\/em><\/strong> a <strong><em>vzniku<\/em><\/strong> <strong><em>ateroskler\u00f3zy <\/em><\/strong><em>a<strong> vysok\u00e9ho krevn\u00edho tlaku<\/strong><\/em>. M\u016f\u017ee se <strong><em>zhor\u0161ovat funkce jater, zvy\u0161ovat hladina cholesterolu <\/em><\/strong><em>a<strong> zvy\u0161ovat riziko n\u011bkter\u00fdch druh\u016f rakoviny<\/strong><\/em>.<\/p>\n\n\n\n<p>Uvedenou glykac\u00ed vznik\u00e1 tzv. <strong><em>zes\u00ed\u0165ovan\u00e1 b\u00edlkovina<\/em><\/strong>, p\u0159i n\u00ed\u017e doch\u00e1z\u00ed ke zm\u011bn\u011b jej\u00ed struktury a vlastnost\u00ed a ztr\u00e1t\u011b biologick\u00e9 aktivity b\u00edlkoviny. Jde pak o tzv. <strong><em>mrtvou potravinu<\/em><\/strong>.<\/p>\n\n\n\n<p><strong>Prevence<\/strong><\/p>\n\n\n\n<p>Aby se v&nbsp;nezvy\u0161ovaly po\u010dty uveden\u00fdch bioaktivn\u00edch molekul,<\/p>\n\n\n\n<ul>\n<li>omezujte konzumaci uzenin, sladkost\u00ed, b\u00edl\u00e9 mouky a nezdrav\u00fdch tuk\u016f.&nbsp;Preferujte va\u0159en\u00ed, du\u0161en\u00ed nebo pe\u010den\u00ed v ni\u017e\u0161\u00edch teplot\u00e1ch p\u0159ed sma\u017een\u00edm. Za\u0159azujte do j\u00eddeln\u00ed\u010dku potraviny s vysok\u00fdm obsahem vl\u00e1kniny, kter\u00e1 pom\u00e1h\u00e1 regulovat metabolismus.<\/li>\n<\/ul>\n\n\n\n<p><strong>Je mo\u017en\u00e9 tyto potraviny regulovat?<\/strong><\/p>\n\n\n\n<p>Maj\u00ed m\u00edt takov\u00e9 potraviny n\u00e1lepku NUTRI-SCORE? Toti\u017e cel\u00e1 \u0159ada st\u00e1t\u016f dan\u00ed t\u0159eba slazen\u00e9 n\u00e1poje. Nab\u00edz\u00ed se ot\u00e1zka, zda by se nem\u011bly podobn\u011b danit i jin\u00e9 potraviny. <a href=\"https:\/\/plus.rozhlas.cz\/nutri-skore-nebude-evropska-komise-ustoupila-potravinarum-k-jednotnemu-hodnoceni-9427511\">Evropsk\u00e1 komise v\u0161ak ustoupila potravin\u00e1\u0159\u016fm, a tak tedy k jednotn\u00e9mu hodnocen\u00ed potravin pomoc\u00ed nutri-score nedojde<\/a>\u2026<\/p>\n\n\n\n<p>Objevuj\u00ed se n\u00e1znaky, \u017ee mohou \u0161kodit i \u00e9\u010dka, dosud vn\u00edman\u00e1 coby bezpe\u010dn\u00e1. Jsou k&nbsp;dispozici jejich dlouh\u00e9 seznamy, je\u017e tvrd\u00ed, \u017ee v&nbsp;t\u00e9 podob\u011b a v&nbsp;tom doporu\u010den\u00e9m mno\u017estv\u00ed ne\u0161kod\u00ed. Jen\u017ee se u\u017e m\u00e9n\u011b hovo\u0159\u00ed o kombinac\u00edch a o tzv. <strong><em>koktejlov\u00e9m efektu<\/em><\/strong>, kdy se m\u016f\u017ee \u0161kodliv\u00fd \u00fa\u010dinek projevit, jakmile se \u00fa\u010dinky jednotliv\u00fdch \u00e9\u010dek spoj\u00ed.<\/p>\n\n\n\n<p><strong>Zm\u011bny v&nbsp;mozkov\u00e9 \u010dinnosti?<\/strong><\/p>\n\n\n\n<p>Skenov\u00e1n\u00ed mozkov\u00e9 aktivity u lid\u00ed dlouhodob\u011b konzumuj\u00edc\u00edch ultrazpracovan\u00e9 potraviny uk\u00e1zalo na zm\u011bny jejich mozkov\u00e9 \u010dinnosti a popisuje je jako <strong><em>automatick\u00e9 chov\u00e1n\u00ed<\/em><\/strong>. Jde o podobnou mozkovou reakci jako p\u0159i u\u017e\u00edv\u00e1n\u00ed klasick\u00fdch n\u00e1vykov\u00fdch l\u00e1tek \u2013 cigaret, alkoholu a drog.<\/p>\n\n\n\n<p><strong>Vzor ze St\u0159edomo\u0159\u00ed<\/strong><\/p>\n\n\n\n<p>K&nbsp;protiv\u00e1ze a k&nbsp;porovn\u00e1n\u00ed uvedu podstatu st\u0159edomo\u0159sk\u00e9 diety, kter\u00e1 pou\u017e\u00edv\u00e1 co nejv\u00edce olivov\u00e9ho oleje na va\u0159en\u00ed a do sal\u00e1t\u016f. M\u00e1 zv\u00fd\u0161enou konzumaci ovoce, zeleniny a lu\u0161t\u011bnin. Omezuje konzumaci masa &#8211; ponech\u00e1v\u00e1 p\u0159edev\u0161\u00edm \u201eb\u00edl\u00e9\u201c maso a ryby. V dom\u00e1c\u00ed p\u0159\u00edprav\u011b om\u00e1\u010dek a p\u0159\u00edsad do sal\u00e1t\u016f d\u00e1v\u00e1 d\u016fraz na pou\u017eit\u00ed olivov\u00e9ho oleje, \u010desneku, cibule\u2026 Vynech\u00e1v\u00e1 m\u00e1slo, smetanu, sladkosti, slazen\u00e9 n\u00e1poje\u2026<\/p>\n\n\n\n<p>A d\u00e1le uvedu aktu\u00e1ln\u00ed (leden 2026) doporu\u010den\u00ed pro zdravou stravu americk\u00e9ho ministerstva zem\u011bd\u011blstv\u00ed (USDA), platn\u00e1 pro obdob\u00ed do roku 2030, zahrnuj\u00edc\u00ed na prvn\u00edm m\u00edst\u011b preferenci potravin bohat\u00fdch na \u017eiviny.<\/p>\n\n\n\n<p>P\u0159im\u011b\u0159en\u00e9 mno\u017estv\u00ed j\u00eddla; potraviny bohat\u00e9 na b\u00edlkoviny; ml\u00e9\u010dn\u00e9 v\u00fdrobky (i&nbsp;tu\u010dn\u00e9) bez p\u0159idan\u00e9ho cukru; barevn\u00e9 ovoce a&nbsp;zeleninu po cel\u00fd den; zdrav\u00e9 tuky \u2013\u2060&nbsp;maso, dr\u016fbe\u017e, vejce, mo\u0159sk\u00e9 plody, lu\u0161t\u011bniny, o\u0159\u00ed\u0161ky, sem\u00ednka, plnotu\u010dn\u00e9 ml\u00e9\u010dn\u00e9 v\u00fdrobky, olivy, avok\u00e1do (konzumace nasycen\u00fdch tuk\u016f s&nbsp;&lt; 10&nbsp;% denn\u00edho energetick\u00e9ho p\u0159\u00edjmu); celozrnn\u00e9 obiloviny; pit\u00ed neslazen\u00fdch n\u00e1poj\u016f v&nbsp;dostate\u010dn\u00e9m mno\u017estv\u00ed. A&nbsp;naopak doporu\u010duj\u00ed omezit konzumaci pr\u016fmyslov\u011b zpracovan\u00fdch potravin, slazen\u00fdch potravin, rafinovan\u00e9ho cukru; alkoholu; soli (na \u2264 2,3&nbsp;g\/den).<\/p>\n\n\n\n<p><strong>Prevence v praxi<\/strong><\/p>\n\n\n\n<p>Velmi \u0161irok\u00e9 t\u00e9ma kolem metabolick\u00e9ho syndromu prob\u00edr\u00e1me osobn\u011b s&nbsp;\u00fa\u010dastn\u00edky p\u0159edn\u00e1\u0161ek a z&nbsp;reakc\u00ed lid\u00ed je zn\u00e1t, \u017ee je to zaj\u00edm\u00e1. V\u011bt\u0161inou ti, kdo na p\u0159edn\u00e1\u0161ku p\u0159ich\u00e1zej\u00ed, jsou o t\u00e9to ot\u00e1zce ji\u017e informov\u00e1ni a v&nbsp;besed\u011b \u017eiv\u011b referuj\u00ed, jak s&nbsp;t\u00edm bojuj\u00ed, jak se jim to da\u0159\u00ed nebo tak\u00e9 neda\u0159\u00ed. P\u0159ich\u00e1zej\u00ed proto, aby byli povzbuzeni a \u010derpali inspiraci, jak v&nbsp;tom pokra\u010dovat. \u017del, spole\u010dn\u011b konstatujeme, \u017ee ti, kdo maj\u00ed pot\u00ed\u017ee a problematika se jich v\u00fdrazn\u011b t\u00fdk\u00e1, nep\u0159ich\u00e1zej\u00ed.<\/p>\n\n\n\n<p>T\u011bm nab\u00edz\u00edme konzultace o jejich zdravotn\u00edm stavu.
