{"id":114,"date":"2021-04-10T08:00:31","date_gmt":"2021-04-10T06:00:31","guid":{"rendered":"http:\/\/symbivita.cz\/rovnovaha-zivota\/?p=114"},"modified":"2021-04-10T08:07:09","modified_gmt":"2021-04-10T06:07:09","slug":"o-cervene-repe","status":"publish","type":"post","link":"https:\/\/symbivita.cz\/rovnovaha-zivota\/2021\/04\/10\/o-cervene-repe\/","title":{"rendered":"O \u010derven\u00e9 \u0159ep\u011b"},"content":{"rendered":"\n<p>P\u0159ed \u0159\u00e1dkou let jsem se v\u011bnoval t\u00e9matu <strong><em>n\u00e1vrat k&nbsp;p\u0159\u00edrod\u011b<\/em><\/strong>\n&#8211; bylin\u00e1m a p\u0159\u00edrodn\u00edm jev\u016fm vyskytuj\u00edc\u00edm se v&nbsp;bl\u00edzkosti \u010dlov\u011bka, snadno\ndostupn\u00fdch a p\u0159in\u00e1\u0161ej\u00edc\u00edch mu u\u017eitek. <\/p>\n\n\n\n<p>Zaj\u00edmav\u00fd a perspektivn\u00ed je pohled <\/p>\n\n\n\n<ul><li><strong><em>nutrigenetiky<\/em><\/strong>, ta se\nv\u011bnuje sledov\u00e1n\u00ed vztah\u016f mezi zd\u011bd\u011bn\u00fdmi vlohami, r\u016fzn\u00fdmi genov\u00fdmi variantami nemoc\u00ed a zp\u016fsobu\nodpov\u011bdi jedince na konkr\u00e9tn\u00ed druh potraviny a do jak\u00e9 m\u00edry m\u016f\u017ee zvolen\u00e1\npotravina ovlivnit jeho metabolismus, zdravotn\u00ed stav, zda dok\u00e1\u017ee sn\u00ed\u017eit rizika vzniku\njeho predisponovan\u00e9ho onemocn\u011bn\u00ed. A podobn\u011b vyzn\u00edv\u00e1 <\/li><li><strong><em>nutrigenomika<\/em><\/strong>, ta se zam\u011b\u0159uje na to, jak\u00fdm zp\u016fsobem \u017eiviny\nnebo slo\u017eky stravy obecn\u011b m\u011bn\u00ed genovou expresi, koncentrace protein\u016f a\nmetabolit\u016f a na to, jak\u00fdm zp\u016fsobem tyto slo\u017eky ovliv\u0148uj\u00ed metabolismus, zdravotn\u00ed\nstav a riziko vzniku onemocn\u011bn\u00ed. Oba term\u00edny se n\u011bkdy sdru\u017euj\u00ed pod n\u00e1zev <\/li><li><strong><em>\u201enutri\u010dn\u00ed genomika\u201c.<\/em><\/strong><\/li><\/ul>\n\n\n\n<p>V&nbsp;hled\u00e1\u010dku\nz\u00e1jmu jsou <strong><em>biologicky aktivn\u00ed l\u00e1tky brukvovit\u00fdch\nzelenin: <\/em><\/strong><\/p>\n\n\n\n<p><strong><em>kapusta, kv\u011bt\u00e1k, brokolice, ho\u0159\u010di\u010dn\u00e1 sem\u00ednka, zel\u00ed, kedluben.<\/em><\/strong><\/p>\n\n\n\n<p>Samostatnou kapitolou je <strong><em>vitamin\nD<\/em><\/strong>. <\/p>\n\n\n\n<p>V tuc\u00edch rozpustn\u00fd vitamin, podle\nposledn\u00edch zji\u0161t\u011bn\u00ed maj\u00edc\u00ed velk\u00fd v\u00fdznam v prevenci, potenci\u00e1ln\u011b i v l\u00e9\u010db\u011b n\u00e1dorov\u00fdch\nonemocn\u011bn\u00ed, v&nbsp;dob\u011b covidov\u00e9 pandemie se o n\u011bm velmi \u010dasto hovo\u0159\u00ed.<\/p>\n\n\n\n<p><strong><em>Zelen\u00fd \u010daj<\/em><\/strong><\/p>\n\n\n\n<p><strong><em>Kurkumin<\/em><\/strong> &#8211; l\u00e1tka\nnach\u00e1zej\u00edc\u00ed se v kurkum\u011b, m\u00e1 jasn\u011b \u017elutou barvu (p\u0159id\u00e1v\u00e1 se do kar\u00ed-ko\u0159en\u00ed) a\npep\u0159ov\u011b naho\u0159klou chu\u0165. V posledn\u00ed dob\u011b se intenzivn\u011b zkoumaj\u00ed jej\u00ed mo\u017en\u00e9 protin\u00e1dorov\u00e9\nvlastnosti pro vyu\u017eit\u00ed v prevenci i l\u00e9\u010db\u011b. <\/p>\n\n\n\n<p>Seznam\ndal\u0161\u00edch potravin m\u016f\u017ee pokra\u010dovat, ale v&nbsp;tomto\n\u010dl\u00e1nku se chci v\u011bnovat \u010derven\u00e9 \u0159ep\u011b.<\/p>\n\n\n\n<p><strong>\u010cerven\u00e1 \u0159epa<\/strong><\/p>\n\n\n\n<p>je zdrojem vitamin\u016f a miner\u00e1l\u016f, obzvl\u00e1\u0161t\u011b velk\u00e9 mno\u017estv\u00ed je zde&nbsp;kyseliny\nlistov\u00e9 \u2013 vitaminu B 9 a vitaminu B6. Tak\u00e9 vitamin C. Z miner\u00e1l\u016f je bohat\u00e1\nhlavn\u011b na mangan, drasl\u00edk, \u017eelezo a ho\u0159\u010d\u00edk a m\u00e1 cenn\u00e9 stopov\u00e9 prvky cesium a\nrubidium.&nbsp;<\/p>\n\n\n\n<p><br>\nObecn\u011b je \u0159epa zn\u00e1ma jako jedna <em>z nejefektivn\u011bj\u0161\u00edch potravin prodlu\u017euj\u00edc\u00edch\n\u017eivot.<\/em><\/p>\n\n\n\n<p>Byla konzumov\u00e1na a kulin\u00e1\u0159sky upravov\u00e1na ji\u017e p\u0159ed n\u011bkolika tis\u00edci lety&nbsp;ve\nstarov\u011bk\u00e9 Babylonii.<\/p>\n\n\n\n<p>\u010cerven\u00e1 \u0159epa byla v dob\u011b nadvl\u00e1dy \u0158\u00edmsk\u00e9 \u0159\u00ed\u0161e nad Evropou mezi\nvysoce postaven\u00fdmi \u0158\u00edmany velmi obl\u00edbenou potravinou.<\/p>\n\n\n\n<p>Velkou tradici m\u00e1 v Rusku.<\/p>\n\n\n\n<p>Paul C. Mnoz\u00ed z t\u011bchto Rus\u016f nikdy <strong><em>neochutnali\nnorm\u00e1ln\u00ed stoln\u00ed s\u016fl<\/em><\/strong>. Pr\u00e1v\u011b ony p\u016fsob\u00ed na zlep\u0161en\u00ed bun\u011b\u010dn\u00e9ho\nd\u00fdch\u00e1n\u00ed, co\u017e m\u00e1 velk\u00fd vliv p\u0159i <strong><em>prevenci i l\u00e9\u010db\u011b n\u00e1dorov\u00fdch<\/em><\/strong> onemocn\u011bn\u00ed.\n<\/li><li>Betain velmi\n\u00fa\u010dinn\u011b podporuje proces <strong><em>detoxikace jater<\/em><\/strong>. <\/li><\/ul>\n\n\n\n<p><strong>Detoxikace<\/strong><\/p>\n\n\n\n<p>M\u00e1 schopnost <\/p>\n\n\n\n<ul><li><strong><em>neutralizovat<\/em><\/strong> v t\u011ble <strong><em>\u0161kodliv\u00e9<\/em><\/strong>\nl\u00e1tky a podporuje jejich n\u00e1sledn\u00e9 <\/li><li><strong><em>vylu\u010dov\u00e1n\u00ed<\/em><\/strong> z t\u011bla, a\nto p\u0159edev\u0161\u00edm <strong><em>z&nbsp;mozku<\/em><\/strong> a <strong><em>st\u0159ev<\/em><\/strong>. Betanin se pou\u017e\u00edv\u00e1 v potravin\u00e1\u0159stv\u00ed jako\u017eto barvivo pod ozna\u010den\u00edm <strong><em>E162<\/em><\/strong>,\ntedy jde o l\u00e1tku, kter\u00e1 je ofici\u00e1ln\u011b pova\u017eov\u00e1na za <em>zdrav\u00ed ne\u0161kodnou a\nnetoxickou<\/em>.<\/p>\n\n\n\n<p><strong>Betalainy<\/strong> <\/p>\n\n\n\n<p>Betalainy jsou pigmenty obsahuj\u00edc\u00ed\ndus\u00edk a jsou rozpustn\u00e9 ve vod\u011b. Rozli\u0161ujeme <\/p>\n\n\n\n<ul><li>\u010derveno-fialov\u00e9 betacyaniny a <\/li><li>\u017elutooran\u017eov\u00e9 betaxanthiny. Due to glycosylation and acylation betalains exhibit a\nhuge structural diversity.<\/li><\/ul>\n\n\n\n<p>Jsou pom\u011brn\u011b nestabiln\u00ed.<\/p>\n\n\n\n<p><strong>Betanin<\/strong> (betanidin-5-O-\u03b2-glukosid) <\/p>\n\n\n\n<p>pat\u0159\u00ed v&nbsp;rostlinn\u00e9 \u0159\u00ed\u0161i mezi betacyaniny. According to the regulation on food additives betanin is\npermitted quantum satis as a natural red food colorant (E162).Podle na\u0159\u00edzen\u00ed o potravin\u00e1\u0159sk\u00fdch dopl\u0148c\u00edch je povolen jako <em>p\u0159\u00edrodn\u00ed\n\u010derven\u00e9 potravin\u00e1\u0159sk\u00e9 barvivo (E162)<\/em>. Krom\u011b toho se betanin pou\u017e\u00edv\u00e1 coby\nbarvivo v kosmetice a l\u00e9\u010divech.Recently,\npotential health benefits of betalains and betalain-rich foods (eg red beet,\nOpuntia sp.) have been discussed. \u0158epou obarven\u00e1 voda se n\u00e1sledn\u011b pr\u016fmyslov\u011b\nzahu\u0161\u0165uje. Moreover, betanin is used as\ncolorant in cosmetics and pharmaceuticals.<\/p>\n\n\n\n<p>Betanin je obvykle z\u00edsk\u00e1v\u00e1n z extraktu \u0161\u0165\u00e1vy \u010derven\u00e9 \u0159epy, koncentrace betaninu v\n\u010derven\u00e9 \u0159ep\u011b m\u016f\u017ee dos\u00e1hnout 300-600 mg\/kg. Najdeme jej u n\u00e1s tak\u00e9 v&nbsp;<strong><em>mangoldu<\/em><\/strong> a potom jeho zdrojem jsou i n\u011bkter\u00e9 kaktusy &#8211;\nopuncie. <\/p>\n\n\n\n<p>Kdy\u017e studujete zdravotn\u011b p\u0159\u00ednosn\u00e9 zeleniny, pak \u010derven\u00e1 \u0159epa \u010di\nmangold mezi n\u011b pat\u0159\u00ed. <\/p>\n\n\n\n<ul><li>Obsa\u017een\u00e9 <strong>betalainy<\/strong><strong>\n<\/strong><strong>obecn\u011b <\/strong>funguj\u00ed jako <strong><em>antioxidanty<\/em><\/strong>,\nmaj\u00ed<strong> <\/strong><strong><em>protiz\u00e1n\u011btliv\u00e9\na tk\u00e1n\u011b \u010distic\u00ed vlastnosti<\/em><\/strong><strong>. <\/strong><strong><\/strong><\/li><li><strong>Betanin vykazuje <\/strong><strong><em>genov\u011b regula\u010dn\u00ed vlastnosti<\/em><\/strong><strong>, ovliv\u0148uje n\u011bkter\u00e9 <\/strong><strong><em>enzymatick\u00e9<\/em><\/strong><strong> reakce a antioxida\u010dn\u00ed <\/strong><strong><em>obrann\u00e9\n<\/em><\/strong><strong>mechanizmy. <\/strong><strong><\/strong><\/li><li><strong>B<\/strong>etanin\nmo\u017en\u00e1 br\u00e1n\u00ed oxidaci LDL a po\u0161kozen\u00ed DNA.
